Holbrook Farm
Saturday, June 12

Here's a new natural area to explore in late spring, an organic farm with lots of open, sunny areas, edge habitats, and woods, all loaded with the season's best shoots, greens, flowers, and fruit.

Wild herbs, greens, and flowers will be thriving in fields, edges, and disturbed habitats. We'll look for red clover and black locust flowers, daylily flower buds; plus herbs and greens such as violets, yarrow, sheep sorrel, field garlic, mullein, garlic mustard, nettles, and chickweed.

Wild fruits are beginning to ripen. We'll look for wild strawberries in fields, and mulberries at the edges of woodlands and along the sides of trails.

Dandelion Leaves

Smaller than the commercial variety, these are way tastier.

In the woods, we'll look for culinary and medicinal herbs such as black birch, sassafras, and common spicebush.

Roots are out of season now, with the exception of burdock root, which tastes like a combination of potato and artichoke, and the immature flower stalk, which Italians call cardune, is also at its peak now.

There could even be spring mushrooms. With enough rain beforehand, we might find species such as chicken mushrooms, dryad's saddle, wine-cap stropharias, and oyster mushrooms.

After the tour, the farm will prepare a delicious organic lunch for the participants.

The 2-hour walking tour begins at 9:30 AM, Saturday, June 12, at Holbrook Farm, 45 Turkey Plain Rd., in Bethel, CT. Lunch will be served at 11:30 AM. The suggested donation is $15/adult, $10/child under 12. With the addition of lunch, the cost will be $25/adult, $10/child under 12.
